What kind of cuts do I get?
Hind Quarter - more steak options, lean roasts
Approx. 200-220 pounds hanging weight
Shortloin - bone-in will get you T-bones and porterhouse steaks, boneless will get you NY Strips and Filets
Top sirloin - cut for steaks, plus a picanha whole or in steaks
Tri-Tip - plain or marinated
Flank Steak - great for the grill or fajitas
Hanging tender - a beautiful cut for the grill
Round Steak - cut for London broils, sliced for jerky, or lean roasts
Cube Steaks - perfect for chicken friend steak, or grind
Rump Roast - sliced for jerky, or lean roasts
Sirloin Tip Roast - sliced for jerky, or lean roasts
Ground beef - your choice of 80% or 85% lean
Stew Meat - can also be ground
Shanks - braised or slow smoked, or we can grind
Front Quarter - Rib steaks, short ribs and good roasts for smoking or braising
Approx. 220-240 pounds hanging weight
Rib - cut into steaks, prime rib roast, or half and half
Flat Iron Steak - perfect grilling cut
Skirt steaks - carne asada, fajitas, or for the grill
Chuck Roasts - perfect pot roast, great slow smoked as well!
Cross Rib - roasts or sliced for carne asada
Short Ribs - cut or a whole plate of dino ribs
Brisket - whole and ready for the smoker, or we will make corned beef!
Ground beef - your choice of 80% or 85% lean
