We take our sausage making pretty seriously here at the shop! Many of our classic recipes have been handed down through generations, and we are constantly developing new ideas. With our crew having extensive culinary and butchering backgrounds, we love putting those experiences to work in our sausage cases.

Jalapeno Cheddar Brats

One of our top sellers! We start with our German brat recipe and add pickled jalapenos and sharp cheddar cheese for kick them up a bit. Perfect grilled or roasted, then served as an appetizer or on a bun.

Battle Mountain Chorizo

A family legacy! Made famous in Battle Mountain at Lemaire’s Grocery, owned by cousins of the Jolly family. It’s a classic Nevada Basque style sausage with plenty of garlic, paprika and a touch of spice. Both fresh and smoked options in the case.

Italian Sausage

Our old world recipe came from Dominic Cartinella, who was a key mentor in the early days of Butcher Boy. Seasoned with herbs, garlic, ground fennel and more. Made mild or spicy. Perfect for a sandwich or your Sunday sauce!

Our classics that are always in the case

Sheboygan Bratwurst - A classic German style brat made famous in the US in Sheboygan, Wisconsin. Our recipe holds true to the original to give you the perfect brat for your tailgate or BBQ. We make them fresh and smoked.

Garlic Artichoke Brats - Our classic brat packed with whole cloves of roasted garlic and artichoke hearts. Sweet, savory and delicious, a great option to elevate your grilling feats.

Lamb Merguez - This Moroccan classic is made with our local lamb, with a bit of our Berkshire pork fat to keep it moist. Rich spices, smoked paprika and red wine give it a bold flavor in every bite.

Pulled Pork Sausage - One of our originals, designed to put the flavor of a smoked pulled pork sandwich right into a sausage. Berkshire pork, house smoked bacon, our vidalia onion BBQ sauce and bbq spice bring it all together. Grill them up and top with cole slaw for the perfect combo!

Andouille - A Cajun classic! Pork sausage seasoned with garlic, peppers, mustard seed and Cajun spices give you flavor packed bites with a bit of heat. Great grilled, and the prefect addition to gumbo, jambalaya and more.

Argentine Chorizo - This Argentine staple was inspired by our friend Osvaldo that brought us his recipe from the pampas of Argentina. Pork and beef, seasoned with lots of herbs, red wine and spices. Grill these up and top with chimichurri on a toasted baguette for a classic Choripan- the famous street food of Argentina.

Bockwurst - An Old World German classic made with pork and veal seasoned simply, with fresh parsley and green onion. A great compliment to a sausage board or served on a pretzel bun with some tangy mustard.

Boerewors - A must for a traditional South African “Braai”! Our recipe came from a combo of customer input and Clint’s experience in butcher shops around Cape Town. Beef with a bit of pork for flavor, and seasoned with rich spices like clove, coriander and pepper.

Cajun Boudin - We wish more people out West knew about this one! More like a seasoned rice stuffing than what we think of as sausage… Ground pork, vegetables, spices and rice are stuffed into a casing and poached. Meant to be served steamed and eaten warm by removing it form the casing. A classic roadside snack in many parts of Louisiana.

Country Sausage - Classic American breakfast sausage perfect for patties or a scramble. All pork, seasoned with salt, pepper, sage and a bit of crushed chile.

Breakfast links - Our traditional country sausage in link form. We also add a few options with our chive links or spicy versions.

German Sausage - A blend of pork and beef with simple seasoning show off how a simple sausage can deliver so much flavor.

Nevada Basque Lamb Chorizo - Dedicated to the hard working Basque sheepherders that settled Nevada centuries ago, this sausage features lamb and pork spiced with smoky chiles, garlic, red wine and a bit of turmeric.

Louisiana Hot Links - Our all beef smoked hot link is spiced up with a variety of chiles, garlic and pepper for a rich and spicy bite every time. A perfect way to kick up a classic hot dog.

Wagyu Dinner Franks - Classic Viennese style frankfurter made from 100% American Wagyu. The natural casing gives a nice snap to every bite. This is what a hot dog should taste like.

Smoked Polish Kielbasa - An Eastern European recipe that features beef and pork seasoned with paprika, pepper and other spices. We slow smoke them to perfection. A great way to add a bit of extra flavor with a toasted bun and good mustard.

Swiss Bratwurst- Known as Käsekrainer in Switzerland, this is a version of bratwurst with sharp Swiss cheese chunks and heavy smoke.

Elk Italian- Our well known Italian recipe made with Elk meat and a bit of pork make these super rich and juicy.

Toulouse- The classic French sausage necessary for a proper cassoulet, and also great roasted and served with braised vegetables.
