Our family recipe corned beef is legendary for it’s amazing flavor and tenderness. The secret is having just the right balance of sweet and salt in the brine, which cures the hand-trimmed Choice beef cuts.

We offer a few different options for the type of cut, each with its own character.

Flat Iron- our shop favorite, this cut will be falling apart tender and full of flavor. Though you can cut it with a fork, the slices will stay together well. $15.98 per pound

Brisket- a traditional cut for corned beef, it has lots of marbling and will shred into fork tender bites when braised. $9.98 per pound

Cross Rib- a leaner option that will yield nice big slices $8.98 per pound

Each cut will be seasoned and ready to cook. We suggest a slow braise to get the most flavor and tenderness- cover with liquid (water, or add a dark beer for a flavor boost) and bring to a boil. Then reduce to a simmer, or finish in the oven at 275 degrees until fork tender. About 1 hour per pound for most sizes, 45 minutes per pound if over 8 pounds or so.
