All-natural Berkshire bred pork is hand trimmed to perfection, then brined with our generations old recipe before it goes into the smokehouse for 16 hours of sweet hickory smoke.

Berkshire pork naturally has more marbling (flavor!) and juiciness, which our curing process only enhances. A blend of maple, sugar, salt and spices kick up the flavor even more for this holiday classic. Sweet hickory wood gives it just the right kiss of smoke and a beautiful golden color.
